About the Bakery + Cafe

Rustica Sourdough is the culinary creation of Brenton Lang. Established in April 2012 in bustling Brunswick Street, Fitzroy, the bakery has quickly become one of the most successful and recognised bakery-cafes in Melbourne.

Delivering artisan breads, baked using traditional sourdough and time honoured techniques, almost everything available is prepared, baked or cooked onsite… from the savory galettes to the espresso tarts. 

We support sustainable farming practices and use local, fresh produce from Spade & Barrow, who actively support local farmers, Laucke flour and meat from local butchers, Largo.

Coffee from the lads at Rumble Coffee Roasters, contemporary breakfast and lunch menus, mouth-watering artisan breads, a rustic industrial feel and some of the best pastries and sweets in town, Rustica Sourdough is a must when you find yourself in Brunswick Street.

With Rustica Canteen in Melbourne CBD, Swan st Richmond and coming soon to Power st Hawthorn Rustica goodness is all over town!

About Brenton Lang

Head Baker and Founder of Rustica Sourdough, Brenton Lang lives and breathes artisan breads. He believes in slow cooking, taking time to nurture the dough and bake loaves using time-honoured traditional techniques with incredible passion and creative flair.

With more than 15 years under his belt, Brenton is an expert within the industry; showing incredible discipline and commitment as a baker, alongside exceptional creativity within the culinary art form.

Brenton is dedicated to continuing the art of sourdough and slowly crafted food at Rustica Sourdough, with his Father Steve running the accounts and his sister Nicole in the café it’s a family affair!
